We'd imagine him smelling something like a wet, blue dog. We have not dared take the perfume out of the plastic to ascertain. However, we have scented Lilo & Stitch action figures, and they smell like coconut.
Boringly enough, the perfume package claims that the scent is "tropical". So probably some kind of vaguely fruity coconut-pineapple scent.
Incidentally, when I first saw the movie I managed to completely misinterpret the lines about Stitch being unable to swim, and thought that they were saying that if Stitch was in the water, he would lose molecular cohesion and melt away. It added a wonderful frisson of horror to the story until I realized my error some time afterwards. :p
